Add chia seeds, oat milk, honey and vanilla extract to a bowl and stir to combine. Let sit for 10 minutes and stir again to break up any clumps.
Cover with plastic wrap and refrigerate for at least 1 hour.
Stir again before serving to break up any clumps.
For Macerated Berries
Add 2 cups berries to a small mixing bowl. If fruit is frozen, thaw to room temperature. Crush berries to your desired consistency (I like to leave some chunks for texture).
Sprinkle berries with 2 Tablespoons granulated sugar. Let sit for at least 15 minutes to draw the juices out of the fruit, then stir to combine.
For Serving
To serve, add a spoonful of macerated berries (about ¼ cup) to the bottom of a serving glass or bowl. Cover with about ½ cup of Oat Milk Chia Pudding. Top with granola, fresh berries, and a drizzle of honey. Enjoy!
